As another year closes we naturally become reflective and look forward to a promising future.
Each year that passes would have had its highs and lows. Whilst the highs are great, the lows can knock us for six. They can be a blow emotionally but then have a knock on effect with our immune system, when at these times we need to be stronger and healthier than ever.
This is when what you do every day matters.
Eating well is not about deprivation; it’s about food that tastes good and that is good for you. That means eating whole, real foods, and getting to enjoy delicious treats with friends and family that do not sabotage your health.
At Health Coach Australia we certainly enjoyed some delicious but healthier versions of our once-upon-a-time favourites this holiday season.
Anyone who knows me (Mel) knows that I’m a bit of a chocoholic. I love a good piece of dark chocolate after lunch or dinner. And yet, most conventional shop bought chocolates are normally filled with processed sugars, dairy, and other toxic nasties, so it’s important to look for chocolate that is filled with minimal, clean ingredients or make your own. It's so easy and fun. Scroll below to find my clean dark chocolate recipe and make it yourself. Add essential oils. We use Young Living essential oils as they are a trusted therapeutic grade oil. You could add chopped nuts, coconut or goji berries?
A real good clean dark chocolate, when chosen correctly, or made by you is known to contain healthy flavonoids. These contribute to cardiovascular protection, enhanced cognition and much, much more. Dark chocolate can also help to buffer the negative effects of stress. I’m certainly not instructing you to binge on dark chocolate when you are facing a stressful situation, but a delicious piece of dark chocolate every now and then might be just what the doctor ordered and keeps that “I’m not depriving myself’ feeling away.
So why was I thinking about chocolate on New Years Eve?
Well while Bendy and I were contemplating the areas in our lives that needed work on next year, we thought about the people we had coached this year. Many clients came to us feeling the dread that we would ask them to go without something, or give something up. At Health Coach Australia, we encourage and guide you to your ideal lifestyle, while giving you the tools and knowledge to be empowered. On the contrary we at HCA concentrate on adding more nutritious foods in, new steps to do everyday that will create new positive habits and push the old stories and patterns you have been following for years. Our clients found that by adding in so many new and delicious foods, there wasn’t room left for the bad foods that were making them sick.
So what are our new daily steps that we are going to be focusing on in 2019?
1. Us time, creating the perfect morning ritual of time outside, primal movement, play and meditation. It sounds a lot but we have been doing this over a long time, but there’s always room for improvement.
2. More bone broth, you can never get too much of the liquid gold. We are going to be replacing our morning decaf with a cup of bone broth. Sometimes we overlook this and we shouldn't.
3. Cook a new recipe we have never tried before every week. Trying new flavours, produce and cooking with spices or herbs we haven’t tried before is only going to diversify our microbiome. Using all the colours of the rainbow will enhance healthy new bacteria.
4. 1-2 hours a day learning new things to be able to share with all of you. We have a few new courses that we can’t wait to begin, so in turn we can help our clients feel better, heal and grow more quickly.
The end of a year is a great way to create new routines, but make them realistic, manageable and personal. Don’t start something you know you won’t continue with and remember that any time of the year is a good time to begin a new healthier you.

Chocolate Cream Drink
In a blender pop and mix until combined. Pour into a glass jar in the fridge until needed. Shake well before pouring and add some ice to serve.
1 tsp organic water processed de-caffeinated coffee – we use the Republica brand from Western Australia for this recipe.
400-500ml of good quality coconut milk
1 tbsp of raw cacao powder
1 tbsp of maple syrup (optional)
1 teaspoon of vanilla essence
A splash of brandy. (I choose this as it’s a spirit, so has no sugar and comes from grapes making it as near to my paleo beliefs as possible. ☺)
My Home made Dark Chocolate
50% Organic Raw Cacao Powder
50% Cacao Butter
1-3 tbsp of coconut oil - depending on how much cacao powder and butter you use.
Organic raw honey – to taste
Melt the cacao butter and coconut oil on a very low heat in a pan. Once melted, remove from the heat and stir in using a whisk until combined well. Then, over 10 mins, keep mixing it well. I have found that if I pour it straight onto baking paper and then into the fridge when too warm the honey can sometime separate.
Pour over your favorite added ingredients and pop into the fridge or freezer until set.
